This is my new obsession. Challenging myself with a vegetarian/vegan diet (depending on the day.) I have enjoyed cooking from this cookbook and learning more about healthy eating. Some of my favorite recipes have been the peanut butter cups and rustic pasta! Dabbling in this eating life style has also helped me get more creative with my cooking and food choices. How have you been challenged this new year?
